You're both right. The two quotes are slightly different and G's quote matches John Wayne's version better.
- WC's quote is more advisory - "Never trust a man that doesn't drink."
- Duke's is more a statement of his philosophy - "I never trust a man that doesn't drink."

And then there is author James Crumley's take on it from The Wrong Case (1975):
